The ever favorite pickled egg has found its way throughout the centuries. Afterall, the chicken is thought to have evolved from an Asian bird about 5,000 years ago. There are a few great things about pickled eggs that should be taken into account. First, eggs are a near perfect little package of protein and they remain remarkedly inexpensive. Second, eggs are easily packed for lunches and the beloved staple of dieters. The pickled egg offers additional benefits in that they can be safely stored and used over a period of months. The spices and vinegar marinate used offers many taste possibilities ranging from sweet and spicy, to hot and peppery. They are the perfect condiment on the table and, unless you're serving a gourmet chef, most people think they require great time and knowledge to make. Not true. They are extremely easy to prepare with ingredients that cost very little. They can be attractively packaged and given as lovely homemade gifts. So, if you're ever in a pickle about how to pickle an egg...here's a recipe for you. Thunderbolt Eggs Ingredients: 2 dozen hard-boiled eggs (peeled) 4 cups Heinz Distilled White Vinegar ? cup vegetable oil 1 jar sliced hot jalapeños with juice 1 medium onion (chopped fine) 3 tbsp. hot habañero Tabasco sauce 2 tbsp. salt 1 tbsp. garlic salt 1 tbsp. crushed red pepper 1 tbsp. ground ginger 1 tbsp. crushed garlic Directions: Bring all of the above ingredients (except eggs) to a boil for 10 minutes in a covered pan. Place the hard-boiled eggs in a container and pour the mixture over the eggs. Allow eggs to marinate in refrigerator for a minimum of 7 days before serving
