Once, during a Duke basketball game, my wife handed me a bowl of raw carrots with a low-fat dip. It was a sweet thing to do. A snack for my game—a healthy snack! “I can’t eat this,” I said. I know carrots are good for you. They contain potassium and carotene, the plant form of Vitamin A, which is known to improve eyesight and even protect against some forms of cancer. And lots of fiber. Roughage. She’s explained this to me a number of times. “I can force myself to eat one maybe, but that’s it. I just don’t enjoy eating raw carrots.” I told her I like carrots if they’re cooked until tender with some kind of flavoring. And I read somewhere that cooking carrots makes it easier to digest the nutrients, which means that more of them are absorbed into your body. She didn’t take my word for it; but when she checked the web, she found out that I was right—especially when it comes to carrots. The result was an original carrot dish, which was such a big hit around here that I’m a carrots fan now. If you're watching your weight, try this one. It's a really tasty vegetable side and has practically no calories, fat or other things that are "bad" for you! ORANGE CARROTS Cut 8 large carrots into bite-sized slices. Put in a pan over medium heat with 3/4 cup orange-pineapple juice (or your favorite orange juice combination), 1 clove minced garlic, ¼ tsp allspice or nutmeg, and salt and pepper to taste. Cover and cook for 10-15 min. Check during cooking and add more juice if necessary; the idea is to reduce the liquid so that it has evaporated by the time the carrots are tender. Makes 4 servings.
