Recently my wife said, “Let’s have something special for breakfast.” Translation: “We’re going to eat the healthiest, tastiest breakfast served anywhere within a hundred miles.” And it was...well, awesome. Considering she likes to use low-calorie, high-nutrition substitutes, I asked, “How did you do that?” And she said: HERBED VEGGIE TURKEY FRITTATA Preheat oven to 425F. Chop 3 spring onions and 1 clove garlic, and slice 6 oz button mushrooms. Also chop 2 slices of smoked turkey and 1 small chopped roasted red pepper (we use jarred). Put a handful of chopped fresh herbs (cilantro, parsley and thyme), ¼ cup plain soymilk, pinch of salt and a few grinds of pepper into 1 cup Egg Beaters (= 4 eggs). Whisk until frothy. Add 1-2 tsp olive (or canola) oil to a non-stick pan that can be put into an oven. Warm to medium-high heat. Sauté onions 2 min; then add mushrooms for 2 more min; then add garlic for 2 more min. Put sautéed veggies into small bowl, wipe pan of remnants, lower heat to medium and add 1-2 more tsp oil. Add Egg Beater mixture to pan for 2-3 min (until bottom of frittata firms), then evenly distribute the turkey, roasted red pepper and sautéed veggie mix to the top of the frittata. Cook on stove top 2-3 min, then put pan in oven for about 10-15 min. Check and remove when top is cooked. Slice into quarters and serve. My wife likes to serve this dish with organic whole grain yellow corn grits (Arrowhead Mills), cooked according to the box instructions. Adding steamed asparagus or your favorite side dish and some fruit turns the meal into a brunch. Special indeed! The beauty of this recipe is that by varying the herb, vegetable and fowl/fish ingredients according to your imagination and taste, you can create an amazing variety of delicious frittatas.
