A couple years ago I took my software programmers to lunch. They chose a fancy pizza restaurant, which was fine with me, since we don't serve or eat pizza in our house. Every now and then a guilty pleasure is good for the soul, I like to tell myself. I was halfway into my first slice, and I picked it up to finish it off. As I did so, a steady stream of grease dripped off the end of it onto my plate. I was so disgusted I couldn't finish my lunch, and I haven't eaten pizza since. I probably never will. At least regular pizza. My wifeloves to concoct dishes that are low-fat equivalents of "the real thing." I know, I know, there is no equivalent or substitute for real pizza. But if you get a craving for pizza, and if you're concerned that pizza is probably one of the most unhealthy foods you can eat, Kathleen got this recipe for a healthy, delicious pizza dish from her sister. PIZZA LITE Preheat oven to 450F. THE BASE. Spray a cookie sheet with cooking spray (olive oil or canola oil) and put 4 whole wheat pita breads on it. Spread your favorite pizza sauce on the pitas (we use half a jar of Enrico's All Natural Pizza Sauce). You can add pesto, if you like. GOODIES. Add thinly sliced onions and chopped Canadian bacon, mushrooms, olives and garlic. Do your own thing! Other tasty options: roasted red peppers, sun-dried tomatoes and artichokes. If you can't get fresh ingredients, use jarred or bagged. Cover the pizzas with 1 cup fat-free shredded mozzarella cheese and add fresh ground pepper. IMPORTANT FINAL STEP. Spray the top with cooking spray (or the cheese won't melt!). Bake 7-10 minutes (check until done). Maybe at some point I crossed over some kind of line, but I think this a fantastic dish. I'm sure it helps to not compare it to "real" pizza. So while you probably won't lose weight eating it, you won't gain any either. Now you can satisfy your craving for pizza with a hot treat that not only tastes great, it's good for you.
