Recipe: Salmon Soup

Yesterday for lunch we shared the last of the salmon soup with a visiting neighbor. It was fantastic while it lasted.

SALMON SOUP (6 generous servings)

STOCK. 2 qt shrimp stock. The best stock is the liquid left over from a shrimp boil. All you have to do is SAVE the liquid from the shrimp boil. Save the shrimp SHELLS, too! Put the shells back into the liquid and boil for about 15 minutes. Then pour through a strainer into freezer-safe containers, mark and freeze for later use. If you’re a little short of 2 qt stock, add some dry white wine. If you don’t have shrimp stock, this will work: Mix 2 cups bottled clam juice, 1 cup dry white wine, ½ bottle beer, 1 qt water, 1 clove chopped garlic, 2 bay leaves, 1 tsp each dried rosemary, oregano and thyme, a pinch of red pepper flakes, salt and pepper (to taste). If this makes more than 2 qt liquid, no problem.

PREP. Chop into ½-inch chunks: 12 oz salmon filet, 1 large sweet potato and 1 large onion. Chop 1 yellow, orange or red bell pepper. Mince ½ bulb fennel. Shred 1 carrot.

COOK. Bring stock to boil, then add prepared vegetables (NOT salmon) and reduce to simmer for 7-12 min, until potatoes are tender. Then add 1 cup frozen green peas and 1 cup frozen “gumbo mix” vegetables (if unavailable, use 1 cup frozen corn). Bring to boil again for 2 min.

SALMON. Add chopped salmon filet, stir, put lid on and remove from heat. Let sit for 2-3 min (to avoid overcooking the salmon). Check and adjust seasoning, then serve.

Salmon soup has lots of vitamin A (sweet potato), anti-oxidants (vegetables), and omega 3 fatty acid (salmon). Remember, for best results cook the shrimp boil first, so you can use the leftover liquid for this recipe.
